Old world meets new world culinary. At the turn of the 20th century, much of Asian countries were colonized by Europeans and food played a big part in Thailand staying as their free state, what was then known as the Colonial era.
During that era, the restaurants in Vietnam were vibrant places, where successful Vietnamese might cross paths with business people or French diplomats from Saigon.
The change was in the air, and yet here one could get a taste of the new without leaving behind the warmth of one’s community. Inspired by the rich early-day culinary, We at Colonial Kitchen created the menu of early days ingredients with modern-style cooking.
