About Chelsea
Unlike most Mexican restaurants, Roberto Santibaez changes his menu according to the seasons. After graduating from Mexico City's Le Cordon Bleu, he began his career as an author and teacher. The most recent position he held was as executive chef at NYC's Rosa Mexicano restaurant.
His experience at Fonda Chelsea allows him to cook exquisite dishes such as chicken enchiladas with tangy tomatillo sauce and duck-filled fresh corn tortillas with tomato-habanero cream sauce.
